Description: Chicken breast with apricot stuffing topped with smoked ham and mozzarella
Preparation time: about 1 hour

Amount/Measure/Ingredient:

6 chicken breasts
1 can apricot halves
1/2 cup chicken stock
6 slices ham
grated mozzarella
Preparation:

Cut a pocket in each breast, puree half the apricots and pour into pockets, place on a heated BBQ grill and cover. Puree remaining apricot with chicken stock and use as a baste and baste frequently.
When chicken is nearly cooked (about 20 minutes ) top with ham and cheese and continue cooking until cheese has melted. Serve with a crisp salad and a crunchy loaf of bread.
