Amount/Measure/Ingredient:
 | 6, large [boneless] chicken
thighs

 | 18
crackers, Saltine type
|
 | 1
egg
|
 | 1/4 cup
flour
|
 | 1/2 tsp.
salt
|
 | 1/4 tsp
pepper
|
 | 1/8 tsp. rubbed
thyme
|
 | 1/8 tsp. rubbed
basil
|
 | 1/8 tsp.
sage

| Preparation:
With rolling pin, crush crackers quite fine,
add the spices and salt & pepper and place on a
plate. In a bowl beat the egg with 2 tbsp. water, place the flour on another
plate. Dip the chicken in flour, then in egg mixture, then in cracker
crumbs. Fry the chicken in a preheated frying pan in 1/8 cup oil until golden
brown. I keep the cooked chicken in a preheated oven [300]degress.
