History: I made this recipe up, as my husband likes to eat chicken that is not messy. It also tastes good.
Description: Lightly Browned and Golden
Preparation time: about 30 minutes

Amount/Measure/Ingredient:
bullet6, large [boneless] chicken thighs
bullet18 crackers, Saltine type
bullet1 egg
bullet1/4 cup flour
bullet1/2 tsp. salt
bullet1/4 tsp pepper
bullet1/8 tsp. rubbed thyme
bullet1/8 tsp. rubbed basil
bullet1/8 tsp. sage
Preparation:

With rolling pin, crush crackers quite fine, add the spices and salt & pepper and place on a plate. In a bowl beat the egg with 2 tbsp. water, place the flour on another plate. Dip the chicken in flour, then in egg mixture, then in cracker crumbs. Fry the chicken in a preheated frying pan in 1/8 cup oil until golden brown. I keep the cooked chicken in a preheated oven [300]degress.
