History: This recipe came from the chef/owner of a restaurant in London, UK more than 25 yrs ago, and no longer in existence. It never fails to please people, whether served at table or after dinner with the coffee and liquors.

Amount/Measure/Ingredient
1/2lb digestive biscuits (preferably McVities English)-1/2lb
good dessert chocolate
1/2lb butter
2 eggs
30z caster sugar
20z glace cherries
20z walnut halves
Small glass of rum (others may be substituted.
Preparation:
Crush digestive biscuits coarsely. Melt the chocolate with the butter over very low heat. Beat eggs and sugar until creamy, beat in melted chocolate and butter. Fold in 3/4 of cherries and walnuts chopped and add small glass of rum. place in mold, decorate with remaining cherries and nuts. Refrigerate until 1/2hr.before serving. Keeps well in refrigerator for at least a week.
