Recipe note: This recipe is from South India. It's mild food but with rich aroma and taste. Easy to prepare and goes well with any hot gravy like chicken Vindaloo or shrimp curry or any vegetable spicy curry.

Preparation Time: 25 minutes

Amount/Measure/Ingredient:

1 cup basmati rice
2 1/2 cups coconut milk
1 onion chopped
2-3 green chille (depending on how spicy u want)
1/2 tablespoon ginger garlic paste
1 bay leaf
4 cloves
2 inch cinnamon stick
2 cardamoms
2 tablespoon ghee
salt to taste

Preparation:

Wash rice well and soak in salt water for 15 minutes.
Heat ghee in a heavy or nonstick pan, add all the spices and fry till you get the aroma. (don't grind them)
Now add onion and fry till golden brown then add ginger/garlic paste.
Fry till the raw smell goes away.
Add the spilt chillies.
Now add the rice and fry for a couple of minutes.
Now add the coconut milk and salt.
Bring to a boil.
Simmer covered, till rice is cooked and water evaporates, the rice should be separate.
Serve hot with any spicy gravy, vegetarian or non-vegetarian.

This could be done in a rice cooker too. After adding the rice and frying for a couple of minutes transfer everything to a rice cooker and then add coconut milk instead of water, cover and switch it on. When all done, the rice cooker will automatically switch off.
