Recipe name: Easy Make Muffins, Muffins or Bread

Serving size: 24 Muffins or 2 loaf pans

Recipe note: 5-10 minutes. Cooking time: Bread 1 hr. till done w/ toothpick test. Muffins: 25-30 minutes.

Preparation time: This recipe is a spin-off from a one-bowl bread recipe. I like it because it is easy to prepare, creates little to no mess. I like it because you can make your own special blend of muffin or bread, simply by using whatever fresh or canned fruit you have around the house. Even mix fresh and canned. Add coconut. Just be sure to place in the blender first! Juice and all.

Amount/Measure/Ingredient:

3 cups of flour
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon cinnamon
2 cups of sugar
4 eggs beaten in a separate bowl
1 1/4 cups of oil
2 cups of blended fruit
For example: (Peaches, Strawberries, Canned fruits)
1 1/4 cups chopped nuts (use what you have or like)

Preparation:

Preheat oven to 350 degrees (F)
In a large mixing bowl, sift the dry ingredients.
Begin adding the rest of the ingredients in any order you wish.
Mix ingredients with a whisk (best), but a wooden spoon will do.
Make sure that all of the ingredients are mixed well.
Now you decide if you want to make bread, muffins, mini-muffins, etc.... I like the muffins.
Place muffin liners in muffin pans and say the liners with non-stick spray.
Use a ladle, or spoon to fill the cups.
Bake muffins for 20-25 minutes.
If you choose to make Bread, grease and flour the loaf pans before filling 3/4 full with batter.
Bake the Bread for 1 hour, or until the bread passes the toothpick test.
Have Fun! Make your own shapes sizes, bunt pans, cake pans, whatever. This Recipe could not be easier!
