Recipe name: Hillbilly Casserole, A Mixture of Household Foods

Recipe by: Cynthia Mueller, Altoona, PA

Serving size: 12

Recipe note: At work, we were going to have a Tractor Party, so I needed something to bring in. I just started making my own creation, and it actually turned out really well.

Preparation time: 20 Minutes

Amount/Measure/Ingredient:

1 box macaroni and cheese, cooked
1 box Au Gratin potatoes, cooked
1-1/2 cups broccoli florets, cooked
1/2 can red kidney beans, drained
5 slices bacon, cooked and crumbled
1 cup corn, canned or frozen

Preparation:

Cook Macaroni and Cheese according to box.
Cook Au Gratin potatoes according to box.
Cook broccoli until it reaches the desired tenderness.
Cut off broccoli stems to leave only small broccoli florets.
In a skillet, cook bacon until dark enough to be crumbled.
Transfer bacon to a plate covered in paper towels.
When bacon cools, crumble into small pieces.
Cook corn until hot.
Drain kidney beans.
Mix Macaroni and Cheese with Au Gratin Potatoes in large bowl.
Add bacon, corn, beans and half the broccoli.
When completely mixed, sprinkle the rest of the broccoli over top.
