Preparation time: 1 3/4 hours

Amount/Measure/Ingredient:

4 chump chops
2 medium onions sliced
1 clove garlic crushed
125 milliliter, warm chicken stock
1 tablespoon corn flour
1 tablespoon rosemary leaves chopped
1 tablespoons each olive oil/butter+1tablespoons.x.v.oil
1 1/2 tablespoons brown sugar
200 milliliter red wine (cab/merlot)

Preparation:

Heat oil in a heavy base fry pan until very hot, add chops and brown quickly to seal, remove to a casserole.
Pour over the stock, wine, cover and cook in an oven set at 165c for 1 1/2 hrs.
Half an hour before ready, heat oil/butter in a small fry pan, and sauté onions, garlic until soft, add the sugar and cook until dk. brown and caramelized.
Remove to a warmed plate.
When chops are done remove and place on plate with onions, keep warm in a low oven.
Boil pan juices to reduce, if necessary, add corn flour, and boil to thicken.
Serve with parmesan potato mash, and peas.
