Recipe name: Red Vegetable Medley with Vanilla, A Mixture of Red Onion, Red Pepper and Tomato

Recipe note: As far as I know it is inspired by French cuisine.

Preparation time: 15-20 minutes prep + 5-10 minutes cooking

Amount/Measure/Ingredient:

2 red peppers, skinned, de-seeded and cut into broad sections
4 medium tomatoes, skinned, de-seeded and cut into broad sections
2 medium red onions, skinned and sliced across horizontally
1 ounce butter
1 vanilla pod, split

Preparation:

Melt the butter in a frying pan and add the vanilla and bring to a medium heat.
Add the peppers first as they take the longest to cook.
Sweat down until soft and add the onion.
When the onion is soft add the tomato.
When everything has cooked through, remove the vanilla and serve.
This is Ideal with fish but works with most things as long as the flavour is not too strong.
