Recipe name: Savoury Sausage and Mash, Sausage and Tomato with Sweet Potato Mash

Serving size: 4

Recipe note: I make this for my kids and they love it.

Preparation time: 35 minutes

Amount/Measure/Ingredient:

8 pork sausages
3 big sweet potatoes
1 stick of celery
1 onion
a dash of chilli powder
1/2 a jar of passata (tomato puree)
a small cup of water
2 cloves of garlic
mixed herbs
an Oxo cube (brand of bullion cube)
some black pepper
a tablespoon of butter

Preparation:

Fry sausages in a little oil until brown, then add the onion and celery, fry for a further 5 minutes.
Add the garlic and passata stir in.
Add the water and Oxo cube and chilli with the mixed herbs.
Simmer for 15 minutes.
Peel the potatoes and chop into chunks, add to a large pan of boiling water and boil potatoes for 15 minutes (depending on size of chunks).
Drain and mash them up and add the butter and black pepper.
Serve on a plate together with your sausage.
Delicious!!
