Recipe name: Tropical Fruits with Coriander and
Sweet Chilli Dressing, Tangy Fruit Salad to Serve with Steak
and Green Salad

Serving size: 6 generously
Recipe note: One of those dishes you toss
together when friends drop by and it turns into a good
night of laughs, food and wine.
Preparation time: 6-8 minutes. No cooking

Amount/Measure/Ingredient:
6 large ripe mangos
1 tin 450gm lychees
1 bunch coriander
1 fresh ginger bud
2 teaspoon sweet chilli sauce
100 milliliter coconut milk
Preparation:
Peel mangoes and slice and place on flat serving
dish.
Drain lychees, reserving juice, slice lychees in half
and scatter over mangos.
Great ginger, mix with chilli sauce and coconut milk and
pour over fruit 1/2 hour before serving.
Chop coriander and scatter over fruit before serving.
Use Lychee juice to make martini's - 1 part gin, 1 part
vermouth and fill glass with Lychee juice.
Sit back and have fun.
