History: This recipe came from our visits to Spain, and we used to have a Moroccan friend with amazing ways of cooking.
Description: Good Cooking encourages it's viewers to try this authentic recipe and enjoy the flavors of Morocco!
Preparation time: about 2 hrs.
Serves: 2 to 4
Amount/Measure/Ingredient:

1 or 2 whole (small) chicken 3 1/2 pound, washed and cleaned inside and out.
3 to 4 onions minced fine.
5 tomatoes minced fine.
1 Tsp. ground cinnamon.
1 Tsp. ground ginger (powder)
3 Tsp. honey.
2 teaspoon ground pepper
dash of salt to taste
1 Tsp. extra virgin olive oil.
2 teaspoon saffron

Preparation:

Put washed chicken in deep oven dish with cover (breast down). Mix all ingredients. Cover the chicken with the mixture of seasonings.
Seal with foil & cover (Be sure it is well sealed and foil crimped around the edges so the steam stays in during cooking.

Put in preheated oven 350 degree F. for 2 hours
