| Amount/Measure/Ingredient:
1 or 2 whole (small) chicken 3 1/2 pound,
washed and cleaned inside and out.
3 to 4 onions minced fine.
5 tomatoes minced fine.
1 Tsp. ground cinnamon.
1 Tsp. ground ginger (powder)
3 Tsp. honey.
2 teaspoon ground pepper
dash of salt to taste
1 Tsp. extra virgin olive oil.
2 teaspoon saffron

| Preparation:
Put
washed chicken in deep oven dish with cover (breast down). Mix
all ingredients. Cover the chicken with the mixture of
seasonings.
Seal with foil & cover (Be sure it is well sealed and foil
crimped around the edges so the steam stays in during cooking.
Put in preheated oven 350 degree
F. for 2 hours
