| History: I have always just loved spaghetti with really good sauce and I have been driven to find the very best so I just started reading over 300 spaghetti sauce recipes and with my 3 mother-in-laws recipes, I put this one together and all my friends and family just go nuts for this sauce |

| Amount/Measure/Ingredient:
1-2 lg. yellow onions, minced fairly fine (
NOTE: all or most of these ingredients can be cut up as you
like, the only exception I feel would be don't insult the
garlic too much, the more you chop it the stronger and more
bitter it becomes so I just smash my cloves)
2-4 lg. garlic cloves (or more if you like) smashed real good
(i use the bottom of a heavy glass jar)
1 small carrot, peeled and grated real fine Or you can just
put whole carrot in and take it out after cooking process(
this takes the acid out of the recipe) if diabetic or don't
want to put in the sugar I put in, then just use the carrot
1 large red pepper-minced or cut the way you like
1 large green bell pepper (optional) some people just don't
tolerate the green pepper as well-cut up the way you like
2 #'s of good ground beef( I have my butcher grind it fresh from a real tender and good sirloin
1-2 #'s of Italian sausage-sweet- Take out of casings
2 -3 #'s crimini or mushroom of your choice -chopped in size of your choice
2 large cans of peeled and diced tomatoes
1 large can tomato sauce
1 large can tomato paste
2-3 large (very fresh tomatoes) peeled and diced to your size( the fresh tomatoes are optional but real
aficionados can tell the difference when you add them
2 t granulated sugar
1 t brown sugar or maple syrup (the real maple syrup)
2 t (as good as you can afford balsamic vinegar) and or 1/4 cup red or white wine
1 bay leaf
1 t oregano
1 t basil
very small pinch of allspice (optional but I'm telling you, its amazing, this makes the recipe)
1 t thyme
1/2 t marjoram
2 t salt
1 t fresh ground pepper
a very very small pinch of cayenne pepper
1 cup of chopped Italian parsley
1 cup of celery, very finely chopped
1 cup of chopped black olives
1 t each garlic powder and onion powder

| Preparation:
Good Cooking didn't receive preparation
information. We assume that you will sauté/sweat the
vegetables, brown the beef ,then add spice and tomato
products. Simmer, and before serving add the parsley,
olives, celery and garlic/onion powder. |
