Rice Goulash

Description: Great Quick Meal

History: When I was young we didn't have very much money. One day my mom came across some extra ingredients we had in the refrigerator and cupboards. She mixed them all together and baked it, it was delicious! I now make it for my daughter and husband.  It's been 20 years and I still love it to this day.

Serving Size: 2-16 people

Preparation time: about 25 minutes

Amount/Measure/Ingredient

2 cups onions, chopped 

2 cups green pepper, chopped 

2 cups red pepper, chopped

2 pounds lean ground beef 

3 cloves of garlic diced 

6 cups of rice 

1 block mozzarella, shredded 

4 cans of tomato juice 

Preparation:

1. In a frying pan cook ground beef until brown. 
2. Mix together green pepper, red pepper, onions and garlic with the ground beef and sauté  until vegetables are cooked. 
3. In a big roasting pan combine hot beef mixture and uncooked rice and mix well. 
4. Add tomato juice until rice looks like it is floating, stir, if needed add more tomato juice to cover the mixture.  Add the cheese and stir. 
5. Place in over at 375 degrees F. Until rice is cooked. 
6. Empty rice goulash in a presentable plate or bowl and serve. 

*Note about this recipe from Good Cooking---When cooking rice you will need 2 parts water or stock and 1 part rice for the rice to cook properly. i.e. 6 cups rice and 12 cups liquid, in this case the tomato juice.  The recipe calls for 4 cans of tomato juice so they are probably 24 ounce cans.  The mozzarella is probably a 1 pound piece.  We also think the baking time , which isn't mentioned, is probably 40 minutes.
