Seafood Tortillas

Description: Seafood in a Tortilla 

History: Just made it up to break the sandwich monotony.

Serving Size: 4

Preparation time: about 15 minutes

Amount/Measure/Ingredient

8 flour tortillas

1 medium tomato, diced 

1 cup of lettuce, shredded fine 

12 oz. imitation crab or lobster salad shredded 

2 stalks celery, diced fine 

4 to 6 heaping tablespoons mayonnaise 

dash of pepper 

1/2 tsp. vinegar 

Preparation:

Put the seafood salad in bowl add celery, pepper, vinegar add mayo to desired consistency - mixing thoroughly. Put in tortillas, top with lettuce and tomatoes roll and serve.
