Preparation time: about 45 minutes

*Custard powder is available here in Australia (and England no doubt) in a packet, it is like Arrowroot with some sweetening agent added and some yolk  colouring to make it yellow. Cook's Thesaurus: Sugar... custard powder Substitutes: instant vanilla pudding mix.

Amount/Measure/Ingredient

 4 eggs

 1/2 cup castor sugar

 3/4 cup cornflour--same as cornstarch

 1 tablespoon custard powder*

 1/2 teaspoon bi-carb.--same as baking soda

 1 teaspoon cream of tartar

 optional--add vanilla essence--same as vanilla extract

Preparation:

Beat egg white VERY fluffy.

 Add sugar, beat well.

 Add egg yolks, beat well.

 Sift flours at least 3 or more times.

 Fold in dry ingredients keep beating continuously.

 Bake 180c  or 355F.  (Moderate Oven) for 24 minutes. 

 Cool, then decorate as desired, now enjoy the feast.
