Recipe name: Roasted Sweet Potato and Nutmeg Soup

Preparation time: 30-40 minutes
Serves: Around  5 depending how hungry your family is!
Amount/Measure/Ingredient:

1 kilo Orange Sweet Potato
25 grams Butter
1 Large Brown Onion
2 Sticks Celery
1 Litre Vegetable Stock
200ml Coconut Milk
1 Teaspoon Nutmeg

Preparation:

Peel Sweet Potato. Roast Sweet Potato for 1 hour at 350 Degrees F. Put butter, celery, onion, in pan till Onion is soft. Add vegetable stock, bring to boil, then cool slightly. Add peeled sweet potato to the pan. Blend until smooth. * Hint just use a blender to mix* pour contents back into pan. Add coconut milk and nutmeg.
