Recipe name: Swedish Roasted Potatoes
Recipe by: Lorri Curtis, Ashford, CT
History: This is an original recipe from a friend who lives in Northern Sweden who is a Swede and a potato Farmer.
Description: Simple but good
Preparation time: 20 min.
Serves: about 4 servings
Amount/Measure/Ingredient:

8 med. potatoes
4 tbsp. butter, melted and divided
Seasoned salt or salad seasoning
3 tbsp. bread crumbs

Preparation:

Preheat oven to 425 degrees. Peel potatoes and slice down through each at 1/8 inch intervals, but do not slice completely through. (I use a large serving spoon to slice the potato on.) Pat potatoes dry. Generously butter a baking dish and place potatoes in it cut side up. Baste potatoes with 2 tablespoons butter (melted). Sprinkle with seasoning. Bake for 30 minutes. Baste with remaining butter and sprinkle with bread crumbs. Bake another 15 minutes or until done. I don't always peel the potatoes.
