Recipe name: Thai Chicken with Portobello Mushroom Tortellini

History: We're a young couple trying to save money, so we spend many nights making chicken and pasta dishes.  Of course, we still love to treat our tastes to a variety of Asian inspired dishes.  The following recipe is a frugal compromise.
Description: New twist on Chicken and Pasta
Preparation time: 5 prep, 20 minutes in all

Amount/Measure/Ingredient:

Ingredients:

1 lb. boneless chicken breasts, cubed
1.5 Tbsp. AFC Natural Miso Paste 
1 Tbsp. AFC Natural Garnish for Miso Soup
1 cup water
1 packet "A Taste of Thai" Peanut Sauce Mix, use both inner envelopes
14 oz. coconut milk
9 oz. Portobello Mushroom Tortelloni
2 cups Honey Roasted Peanuts and Cashews
2 lime wedges

 

Preparation:

In a medium saucepan boil water. Add Miso paste, garnish, and chicken. Cover. Simmer until chicken is cooked, about five minutes. Drain some and set aside. In medium saucepan, mix Peanut Sauce Mix and coconut milk. Bring to a boil, stirring constantly. Reduce heat. Simmer 4 minutes. Add chicken, pasta, and nuts. Toss well and serve with lime wedges.
