| History:
My grandmother always made this dish for my cousins and I when we were children growing up in Puerto Rico. It's fast, simple, filling, and we loved it! I have never seen this recipe anywhere else so I thought it would be nice to share it. |

Plantains with Tuna and Corn |

Amount/Measure/Ingredient:
4 large green plantains (the greener the better)
2 6-oz cans of tuna, drained
1 15-oz can of whole kernel corn, drained
Olive oil to taste
Salt (Optional)

| Preparation:
Peel plantains and cut them in four pieces.
Boil plantains until thoroughly cooked (about 10-12 minutes).
Place plantains in a large mixing bowl and mash them until no
large pieces are left. Add tuna and corn. Mix well.
Add olive oil to taste and salt if you wish and mix it well.
Serve.
