Microwave Turkey and Wild Rice Soup

Recipe By: Clipper

Description: Soup made with leftover turkey and wild rice. It's not bad and it is quick.

Serving Size: 4

Preparation time: about 20 minutes

Amount/Measure/Ingredient

1 cup wild rice

2 cups water

2 cups turkey, diced

1 large onion, chopped

1 can, 12 ounces, Swanson chicken broth

1 can, 12 ounces, cream of celery soup

salt and pepper to taste

Preparation:

Combine rice and water in a large bowl, microwave on high for 15 minutes.  Add onions, broth, cream of celery soup, salt and pepper.  Stir until smooth.  Microwave 3-5 minutes or until it boils, it's ready.  Add more broth if it's too thick for your liking.

By the way, if it is a wild  turkey and a little dry, add more chicken broth!
