just remember my granny making this....
Description: A
mix of veggies in tomato sauce that can be used in a variety
of ways, as a side dish, in an omelet, or over rice and can be
eaten hot or cold.
Preparation time: Less
than a half hour
Serves: 2-4
depending on it's use
Amount/Measure/Ingredient:
2 zucchini....cut into pennies
1 onion, peeled and sliced
8 oz of mushrooms, cut in slices
1 green bell pepper, cut into strips
2 cloves of garlic, peeled and left whole
dash cayenne pepper...to taste.
salt and pepper to taste
8 oz can of tomato sauce, I use Hunts...
3-4 tablespoons olive oil.
It's important to note that quantities aren't exact...you can use more of one thing than another, according to your liking.
If you use more veggies, just increase oil and tomato sauce...This freezes well, so I am inclined to make more....
Preparation:
Heat oil in a large frying pan, sauté garlic until just starting to redden, then discard.
Add all veggies and sauté until soft, then add cayenne, pepper and salt, and tomato sauce...
Cover and cook on low 15 minutes..
You can sprinkle some parmesan cheese each serving.
It's ready to serve hot as a side dish, over rice, as an omelet filling...
