A roux is a sauce with thickening properties made by heating a
fat (oil or butter) and whisking in an equal amount of flour. This can
immediately be a base for a white sauce (by adding milk or cream), or it can
cook further until peanut or chocolate colored and become a brown base for gumbo
and other Creole dishes (by adding veggies and stock)s.
