Note: Paul Bocuse created this soup in his restaurant during the early
1980's, it was instantly copied by chef's worldwide for its spectacular
presentation and great depth of flavor. I remember preparing it at many a
banquet of 150 or more people when I was Executive Chef of the Ritz-Carlton
Hotel in Boston, MA, USA
