1 vanilla bean
1/4 cup boiling water
1 tablespoon honey
1 tablespoon sunflower or soy oil
1 teaspoon liquid lecithin
Cut vanilla bean into small pieces; place in small bowl. Pour boiling water over the bean pieces. Cover and let stand to steep overnight.
Place mixture in blender and blend at medium speed until combined. Pour extract into a small bottle. Cap tightly and store in refrigerator. Shake well before using, and use same amount as called for in recipe.
