Keep this syrup on hand all summer for a quick cold drink.
2 tablespoons grated lemon rind
2 cups fresh lemon juice
2 cups granulated sugar
1 1/2 cups water
Mix together rind, juice and sugar. Stir until sugar is dissolved. Add the water, cover tightly and keep in the refrigerator.
To serve, put 1/2 cup syrup in a large glass with ice, then fill with water.
