Serving size: 2 dozen dumplings
Preparation time: about 45 minutes

Amount/Measure/Ingredient:
1 pound pork, fresh ground
1/2 egg, large, beaten
1 tbsp. ginger, chopped fine
1/4 cup bamboo shoots, chopped
1/4 tsp. chopped garlic
1 tsp. cilantro, chopped
1/2 cup scallions, sliced thin
1 tsp. sesame oil
2 tbsp. black Chinese mushrooms
1 tsp. salt
1/4 tsp. white pepper, ground
2 tbsp. soy sauce
2 tbsp. chicken stock
3 tbsp. cornstarch
Simple Dipping Sauce
2 Tbsp. Soy Sauce
1 Tbsp. Cider Vinegar
1 Tbsp. Sugar
1 Dash Ground White Pepper
Combine all ingredients and stir to dissolve the sugar.

Preparation:
Simply combine all ingredients and mix very well so all ingredients are equally distributed. Store in a covered bowl in the refrigerator until ready to use.
To make your ravioli, first make the dough, or you may use pre-made wonton wrappers. Place 2-3 tsp. of filling in each wrapper, seal, pan steam and pan crisp. Serve with a soy-based dipping sauce.
