3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar
1/2 cup lightly salted butter or margarine, softened
1 (1 ounce) square semisweet chocolate, melted
1 tablespoon Bourbon
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
1/2 cup chopped pecans
Preheat oven to 400 degrees F. Put paper liners in muffin cups.
In a bowl mix first three ingredients.
In another bowl cream butter and sugar until light and fluffy. Beat in chocolate, egg, Bourbon and vanilla extract. Add dry mixture to wet mixture until just combined. Stir in chocolate chips and nuts. Spoon into muffin liners, bake for 15 to 20 minutes or until done.
Makes 9. These muffins freeze well.
