POP OVER MUFFINS

    Pop Over Muffins

    2 cups all-purpose flour
    1/3 cup granulated sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    4 eggs
    1/2 cup milk
    1/4 cup butter flavored shortening, melted

    Preheat oven to 400 degrees F.

    In a large mixing bowl stir together the flour, sugar, baking powder and salt. Make a well in the center.

    In a medium mixing bowl combine the eggs, milk and melted shortening. Add all at once to the flour mixture. Stir with a fork until the dry ingredients are just moistened.

    Grease 12 muffin cups. Fill until almost full. Bake for 15 minutes or until muffins are golden. Remove from pan.

    Makes 1 dozen.
