Recipe for Orange Poppy Seed Muffins


    Orange Poppy Seed Muffins

    1 1/3 cups flour
    1 cup granulated sugar
    2 tablespoons grated orange rind
    1 tablespoon poppy seeds
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1/2 cup sour cream
    1/3 cup butter, melted
    1 egg, slightly beaten
    2 tablespoons frozen orange juice concentrate

    Blend dry ingredients. Gently stir in sour cream, butter, egg, and orange juice. Don't over-mix; batter should be lumpy. Fill muffin tins 3/4 full and bake at 400 degrees F for 18 minutes or until tester inserted in center comes out clean.

    Makes 12.
