Parfait Pie

1 small box lemon Jell-O
1 1/4 cups hot water
1 pint strawberry ice cream
1 1/2 cups sliced fresh strawberries

Dissolve Jell-O in hot water in a 2-quart saucepan. Add ice cream by spoonsfuls, stirring until melted. Chill until thickened but not set (15 to 20 minutes). Fold in drained strawberries. Turn into pie shell.

Cherry-Banana Parfait Pie: Cherry Jell-O, vanilla ice cream and 1 1/2 cups sliced bananas.

Pineapple Parfait Pie: Lime Jell-O, vanilla ice cream and 1 cup crushed pineapple.

Orange-Coconut Parfait Pie: Orange Jell-O, vanilla ice cream and 1 cup shredded coconut
