Recipe for Zucchini Loaf

ZUCCHINI LOAF

    ZucchiniLoaf

    3 cups shredded zucchini
    1 cup cooked brown rice
    1 cup wheat germ
    1 1/4 cups shredded cheese
    1 cup walnuts, chopped
    2 cups sliced fresh mushrooms
    4 scallions, sliced
    4 eggs
    3 garlic cloves, minced
    1/2 teaspoon sage
    1/2 teaspoon salt
    1/4 teaspoon pepper

    Mix all the ingredients, using 1 cup of the shredded cheese. Put all into a greased 9 x 5-inch loaf pan. Sprinkle with 1/4 cup shredded cheese. Bake for 50 minutes at 375 degrees F.
