CALYPSO MEAT LOAF

    Calypso Meat Loaf

    1 1/2 pounds ground round
    1/2 cup tomato sauce
    1 cup soft bread crumbs
    1/4 cup egg substitute
    2 tablespoons minced onion
    2 teaspoons Worcestershire sauce
    1/4 teaspoon ground black pepper
    Cooking spray
    1/2 cup plus 2 tablespoons tomato sauce
    1/4 cup crushed pineapple in juice, drained
    2 tablespoons minced onion
    1 1/2 teaspoons brown sugar
    1 1/2 teaspoons lime juice
    1 teaspoon Worcestershire sauce
    1/4 teaspoon ground allspice
    1/8 teaspoon salt
    1/8 teaspoon ground ginger
    1/8 teaspoon dry mustard

    Combine first 7 ingredients. Shape mixture into an 8 x 4-inch loaf; place on rack in a roasting pan coated with cooking spray. Bake at 350 degrees F for 1 hour and 5 minutes.

    Combine 1/2 cup plus 2 tablespoons tomato sauce and remaining ingredients. Pour over meat loaf, and bake an additional 5 minutes.

    Yield: 8 servings
