BAKED DOVES WITH GRAVY

    Baked Doves with Gravy

    18 to 22 doves
    Salt and pepper, to taste
    Flour
    1/2 cup vegetable oil
    1/2 cup chopped scallions
    1 1/2 cups water
    1/2 cup sherry
    1/2 cup chopped parsley

    Salt, pepper and flour doves. Brown in oil in Dutch oven at 400 degrees F. This takes about 1 hour.

    Add scallions, water, sherry and parsley. Cover and reduce heat to 350 degrees F.

    Cook until tender, about 2 to 2 1/2 hours. Makes a wonderful gravy.

    Serve with wild rice.

    Yields 8 to 10 servings.
