LEMON CHESS PIE

    Lemon Chess Pie

    3 eggs, beaten until light
    1 1/2 cups granulated sugar
    1/4 cup fresh lemon juice
    1/2 teaspoon lemon zest
    3 tablespoons melted butter
    1/8 teaspoon salt
    1 (8-inch) pie shell

    Thoroughly combine eggs, sugar, lemon juice and rind, butter and salt. Pour into unbaked pie shell. Bake at 350 degrees F until well browned, about 35 to 40 minutes.
