1 Boboli or homemade crust
1 bunch spinach
1 head garlic
Crumbled feta cheese
Sliced sun-dried tomatoes
Preheat the oven to 450 degrees F. Spray or grease a pizza pan or stone.
Prepare wilted spinach by first thoroughly washing and drying, removing stems, and then stir-frying until wilted. Prepare roasted garlic by skinning head of garlic, coating with olive oil, and baking covered for 20 minutes in a 350 degrees F oven.
Top crust with olive oil, wilted spinach, crumbled feta cheese, the roasted garlic, and sliced sun-dried tomatoes. Bake on the bottom rack of preheated oven for 8-12 minutes or until cheese is melted and crust is piping hot.
