4 flour tortillas
1 large tomato
1/2 pound ground sausage
1 large potato, peeled and grated
1 cup grated Monterey jack or Cheddar cheese
Cook sausage in a frying pan. Add potatoes, and cook until brown. Drain fat.
Warm the tortillas. Scramble eggs. Divide all ingredients evenly among the flour tortillas. Season to taste with salsa or salt and pepper. Fold tortillas and serve immediately.
