6 large eggs
1/4 cup milk
1/8 teaspoon salt
1 tablespoon butter or margarine
1/2 cup jack cheese, cubed
1/2 cup green chiles, seeded and diced
6 corn tortillas, softened
1/3 cup sour cream
1 ripe avocado, peeled and sliced
In a mixing bowl, combine eggs, milk and salt and mix well.
Melt butter or margarine in skillet. Add eggs to skillet and cook over medium heat, stirring gently. When eggs are almost set, add cheese and chiles. Cook until firm, or desired consistency.
Fill each tortilla with egg mixture and fold. Top with sour cream and garnish with sliced avocado. Serve immediately. Serves 6.
NOTE: To soften corn tortillas, wrap in moistened paper towels and heat in microwave for about 20 seconds.
