Recipe for Vegetable Croquettes


    Vegetable Croquettes

    3 cups mashed potatoes*
    1 cup minced celery
    2 onions, grated
    1 cup grated carrots
    1 teaspoon salt
    1/8 teaspoon pepper
    1 egg
    Bread crumbs

    Mix ingredients together and shape into croquettes. Dip into beaten egg and roll in dry bread crumbs. Chill. Fry in deep fat until golden brown.

    * Mash without using milk or any liquid.
