Recipe for American Vegetable Stew


    Yield: 4 servings

    1 ea Yellow onion, chopped
    1 clove Garlic, crushed
    1 ea White potato, chunked
    1 ea Carrot, sliced
    1 ea Celery stalk, sliced
    1 ea Zucchini, sliced
    1/2 cup Broccoli, chopped
    1 ea Leek, trimmed, washed & sliced
    2 cup Tomato sauce
    1 tbsp Parsley
    1/2 tsp Paprika
    1/2 tsp Basil
    1/2 tsp Chili powder
    1/4 tsp Dry mustard
    1/4 tsp Cumin
    1/8 tsp Pepper

    Cook the onions, garlic, potato, carrot and celery in a small amount of water in a large saucepan for 10 mins. Add the remaining ingredients and cook over low heat until the veggies are tender, about 35 mins.
