CANDIED CASHEWS

    Ingredients

    1 quart cashews
    1 cup sugar
    1 cup butter
    1/4 cup lemon juice
    1 teaspoon cinnamon

    Heat oven to 350F.

    In heavy bottom pot melt the sugar with butter, lemon juice and cinnamon and bring to a slow boil. Add the cashews and stir to coat.

    Spread onto a lightly oiled sheet pan and bake for 25 minutes stiring 3-4 times. Cool---serve at room temperature.
