RAISED BOHEMIAN DUMPLINGS
1 1/2 teaspoon dry yeast
1 1/2 cups warm milk
1 tsp. sugar
5 cups sifted flour---sift flour and then measure
1/2 tsp. baking powder---(sift with 1 cup of the flour)
2 tsp. melted butter
2 tsp. salt
2 large eggs beaten
1 1/2 cups cubed and toasted hard rolls or Vienna bread
Mix yeast with 1 cup warm milk and let sit 10 minutes, stir.
Add 5 cups sifted flour and baking powder, stir in butter, salt and eggs and mix well.
Cover and set to proof for 1 hour.
Add bread cubes and fold and gentle knead into the dough until smooth.
With floured hands, shape into 8 mini-football pieces and let rise for 1 hour on a lightly oiled sheet pan and covered with a towel.
In a very large pot with boiling salted water gently drop the dumplings in and boil for 10 minutes, turn over and boil 10 minutes more. (Two batches are recommended)
Remove and slice and serve with a pot roast, roast pork and gravy or paprikas!
