Recipe for V-8 Meatloaf

    Yield: 16 Servings, 8 oz. each

    1 lbOnions, small dice
    8 oz. Celery, small dice
    2 Tbsp. Garlic, chopped
    2 fl. oz. Vegetable oil
    4 cups Fresh bread crumbs
    1 pt. V-8 juice
    4 lb Ground beef
    4 lb. Ground pork
    4 Eggs, beaten
    4 tsp. Salt
    1 Tbsp Black pepper
    4 Tbsp.Parsley, chopped
    3 Tbsp. Worcestershire sauce

    Ketchup as needed as needed

    Saute the onions, celery and garlic in the oil until tender. Remove from the heat and cool.

    Combine all the ingredients except the ketchup and mix well.

    Form into loaves of the desired size and place in loaf pans.

    Brush the top of each loaf with ketchup as desired.

    Bake at 350°F (180°C) until the meatloaf reaches an internal temperature of 165°F (74°C), approximately 1 hour for a 9-inch x 5-inch (22-centimeter x 12-centimeter) loaf pan.

    Allow the loaves to rest for 15 minutes before slicing. Cut slices of the desired thickness and serve with a tomato or mushroom sauce.
