WELSH RAREBIT #2
Serves 2 to 3
Preparation time: 10 minutes
3 cups yellow Cheddar cheese, grated
dash cayenne pepper
2 tablespoons strong ale
4 tablespoons butter, at room temperature
2 teaspoons Dijon mustard
4 slices bread, toasted crisp and buttered
Combine the cheese, butter, mustard and pepper. Add the ale and stir until smooth over a double boiler until smooth and creamy.
Pour mixture onto the hot toast and serve immediately.
