SYMPOSIUM MEDITERRANEAN RESTAURANT PORTABELLA SOUP

    Symposium Mediterranean Restaurant Portabella Soup

    Serves 6

    1/4 pound butter
    1 medium Spanish onion, diced
    1 1/2 cups portabella mushrooms, sliced
    1 bunch fresh tarragon, chopped
    1/2 cup dry vermouth
    2 tablespoons flour
    1 quart heavy cream *
    1 cup crumbled Gorgonzola or blue cheese
    Salt and pepper, to taste

    Melt butter in a 3-quart pan, and saute.
