NANAIMO BARS

    Nanaimo Bars

    Bottom layer
    1/2 cup unsalted butter
    1/4 cup granulated sugar
    4 tablespoons cocoa
    1 egg, beaten
    2 cups graham cracker crumbs
    1 cup coconut

    Melt butter, sugar, cocoa in double boiler. Add egg and stir until cooked and thickened. Remove from heat. Stir in crumbs and coconut. Press into an 8-inch square pan.

    Middle layer
    1/4 cup unsalted butter
    3 tablespoons cream
    2 tablespoons vanilla custard powder
    2 cups confectioners' sugar

    Cream ingredients together. Beat until light. Spread over bottom layer.

    Top layer
    4 ounces semisweet chocolate
    1 teaspoon butter

    Melt over low heat. Spread over top of bars. Cool in refrigerator.
