OATMEAL MACAROONS

    Oatmeal Macaroons

    4 cups quick-cooking oatmeal
    1 cup vegetable oil
    2 cups dark brown sugar
    2 eggs, beaten
    1 teaspoon vanilla extract
    1 teaspoon almond extract
    1 teaspoon salt
    Chocolate chips (optional)

    At least 6 hours before baking, mix oatmeal, oil and brown sugar.

    When ready to bake, mix in remaining ingredients. Drop by rounded teaspoonsful 2 inches apart on a greased cookie sheet and bake at 325 degrees F for 13 to 15 minutes. Remove at once to cooling rack.

    These keep well in a covered container for several weeks.
