Nacho, A small tortilla chip topped with melted cheese, chile peppers and salsa.

Nappe - the ability of a liquid to coat the back of a spoon or the act of coating a food, such as a leg of lamb, with glaze.

Nasu, Japanese for Eggplant.

Needling - injecting fat or flavors into an ingredient to enhance its flavor.

Nicoise, A method of preparing foods with tomatoes, garlic, olive oil and black olives.

Nimboo, Indian for Carrot.

Noci, Italian for Walnuts.

Noisette, French for Hazelnuts.

Nougat, A sweet made with roasted almonds and honey.

Nouille, French for noodles.

Nudeln, German for Noodles.

Nuez moscada, Spanish for nutmeg.
