Instructions:
Yield: 4 servings
1 3/4 cup Carrots, grated
2 ea Oranges, peeled, seeded & chopped
1/3 cup Raisins
1/4 cup Walnuts, chopped
1 tbsp Olive oil
2 tbsp Lime juice
1/2 tsp Cumin, ground
1/4 tsp Cinnamon
1 tsp Liquid sweetener
Lime slices, to garnish
Combine carrots, oranges, raisins & walnuts in a large bowl & set aside. Place remaining ingredients in a jar with a lid & shake well. Pour over the carrots. Chil for at least one hour. Garnish with lime slices.
