Instructions:

Bulgar soaks - 15 minutes
1/4 cup olive oil
1/4 cup lemon juice
1 tsp. salt
1 cup bulgar, cracked wheat
1/8 teaspoon freshly ground pepper
romaine lettuce for garnish
6 scallions, chopped
1/2 cup fresh parsley, finely chopped
5 tablespoons fresh mint, finely chopped
3 large tomatoes, peeled and finely chopped
sliced cucumbers for garnish
black olives for garnish
lemon wedges for garnish
Soak the bulgar in a bowl of water for 15 minutes. Drain and squeeze dry.
Transfer the bulgar to a mixing bowl. Add the remaining ingredients, except for the garnishes, and mix well.
Line a serving platter with lettuce leaves. Heap the salad in the center of the platter and garnish with cucumber slices, black olives and lemons.
