Pate Spice

1 tbsp. powdered bay leaf
2 tsp. thyme
2 tsp. coriander
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ground cloves
2 tsp. ground ginger
1 tsp. mace
1 tbsp. black pepper
1/2 tsp. cayenne pepper
1 tsp. white pepper
1 tsp. marjoram


1 T. of pate spice is used per pound of forcemeat.
